There are a total of 20 gestures to be learnt in Dark Souls 2, these are learnt a variety of different ways, you won’t need to perform the gesture, for it to count towards your trophy / achievement, simply acquiring them will suffice, 8 of which are obtained automatically at the start of the game
Below I will list off all 20 gestures, including the aforementioned 8 automatically acquired gestures in the order you can find them

Welcome
In Majula, head up the stairs to the right, speak with Crestfallen Saulden, exhaust his dialogue to learn the Welcome gesture
Joy
Use a Fragrant Branch of Yore on Rosabeth of Melfia on the way to the Shaded Woods, go and speak with Benhart of Jugo, just outside of the room where you find Rosabeth. Exhaust his dialogue to receive the Joy gesture
Duel Bow
Make your way to the Cathedral of Blue, speak with Blue Sentinel Targray whilst you have a Token of Fidelity (click the button below to be taken to the main game guide then go to the Protector Covenantguide for information on this), exhaust his dialogue to receive the Duel Bow gesture
In Huntsman’s Copse, make your way to the Undead Lockaway Bonfire, speak with Creighton the Wanderer, exhaust his dialogue to receive the Fist Pump gesture
Praise The Sun
Make your way to the Altar of Sunlight, in Harvest Valley (click the button below to be taken to the main game guide then go to the Brilliant Covenant guide for information on this), interact with the Altar and join the Heirs to the Sun Covenant toreceive the Praise The Sun gesture
Make your way through Earthen Peak to the Central Earthen Peak bonfire, just pass this bonfire, stay left, smash the wooden barrier, out on the ledge will be Laddersmith Gilligan, speak with him then make your way back to Majula. You will then find Gilligan next to the large hole, select the option learn gesture to acquire the Prostration gesture
Have Mercy!
Speak with Grave Warden Agdayne in the Undead Crypt whilst you don’t have a torch lit (he will ignore you if you bring light with you), speak with him until you receive the Have mercy! gesture
Decapitate
Speak with the Head of Vengarl(click the button below to be taken to the main game guide then go to the Reflections On Disembodiment guide for information on this) in the Shaded Woods, exhaust all of his dialogue to receive the Decapitate gesture
You will need to have defeated Scorpionness Najka, the boss in the Shaded Woods, have purchased and have equipped the Ring of Whispers from Sweet Shalquoir in Majula, then speak with Manscorpion Tark in the Shaded Woods in the underground tunnel section to learn the Warmup gesture
This One’s Me
In Drangleic Castle, you will come across Chancellor Wellager just inside the main entrance, exhaust his dialogue until you learn the This one’s me gesture
Hurrah!
You can acquire the Hurrah! gesture in the Memory of Vammar in the Forest of Fallen Giants. To access the memory, you will first need to acquire the Ashen Mist Heart from the Ancient Dragon (click the button below to be taken to the main game guide then go to theAncient Dragon guide for information on this). At the start of the memory you will see Captain Drummond, speak with him to receive the Hurrah! gesture
